organic= indicates visitors referred by an unpaid search engine listing.
referral= indicates visitors referred by links which were not tagged with any campaign variables.IE you send me an email with a link to here I click on that, will then show me as a referral. As will rss feeds.

organic traffic comes from the search engines, where referral traffic comes from those websites where you added your website links.
Ive always wondered that also. I think it could be from image searches, but then again I vaguely remember seeing something like images.google (referral). It could also be adwords maybe?
Google organic = search listings on the page of their engine
Google.com referral = campaigns from their search engines or content network.
I have not seen them do the best of jobs in separating these but atleast they try. The numbers I get in a campaign for paid traffic are not the same as what I get in google.com referrals most of the time but nothing is perfect including referral tracking I suppose. I do like to look at the organic results and see what is bringing free guys to my sites so I know where to go with it and look at other guys organic KW results ( Flippa or whatever look at their GA) and see what brings their similar sites traffic because that is a way to build KW list and better converting image ads.

google organic are the true visitor comes directly on your site through and Google ref feral are the visitors that come to your site through reference like facebook or any otherways.
Organic means traffic drive free without paid & refferal means anyone who refered direct site
